Better late than never as they say finally got over a bad cold that took down both me and my wife… I know exactly where I got it too so to the guy in the office who was coughing and sneezing all over the place the week or so before Christmas – thank you very much for your gift! People please if you’re sick stay home, rest, brew up some of my Spanish Hot Toddy and get yourselves better don’t go to work and spread it to everyone.
With that out of the way I hope everyone is having an out of this world and amazing Christmas Season and yes it is a Season. I’m sure you’ve heard of the 12 Days of Christmas which is the time ranging from Christmas to the Epiphany (when the 3 Wise Men came). I celebrate the 12 Days every year and luckily we’re only halfway through so I’ll still be able to enjoy the last half of feasting and merry making now that the worst of this cold is over.
Typically the Christmas Feast is my retreat and time period to recover from the chaos of the year, to regroup & recharge for the coming year, to rest and enjoy the company of my family filled with lots of joy, good wine and excellent food. Starting at sunset on Christmas Eve and lasting all the way until the Feast of the Epiphany on the 6th of January is my Christmas Feast.
Tonight for New Year’s Eve I will be preparing some Filet en Croute which are delicious individual Beef Wellington’s, a gratin of Creamed Spinach, and some Garlic Mashed Potatoes. A truly wonderful meal and on that I better start cooking it’s a bit of a lengthy process but well worth the effort!
